Soyabean is very useful in the preparation of bread, biscuits, cakes,
pastries, soups, pulse analogues, extruded snacks etc. It is rich in proteins, fat, carbohydrates, mineral salts and vitamins A, B & D and when sprouted contains vitamin C. It s also rich in mineral salts of calcium, sodium, manganese and phosphorus. Industrially, Soyabean oil extracts are use in the manufacture of vanaspati, margarine, vegetable ghee, etc. and also a s medium of paints, varnishes, linoleum, printing inks etc. Soya oil contains lecithin and Vitamin A and it is usually substituted for olive oil. After the oil extraction, the resulting residue cake/meal is very rich in protein and mineral salts. And very valuable as fertilizer or as feed for livestock or for preparing flour for general consumption. Defatted Soya flour is of great importance in diabetic dietary. Since its starchy contents and saccharides are low, it s well suited for diabetic patients.
