PISTACHIO SOYA DELIGHT
 
  Ingredients

1 (10 1/2 oz.)            carton firm, silken soya tofu
1 (20 oz.) can           unsweetened crushed pineapple, drained
1 pkg.                      instant pistachio pudding mix
1/2 tsp.                    coconut extract

  Method

Blend tofu in food processor until very smooth. Add pineapple, coconut extract and pudding mix. Blend. 

Yield: 6 serving.
