Ostrich steaks

Green pepper, thinly sliced

Onion, thinly sliced

Tomato, chopped

Lime juice or 1 whole lime

Chicken broth

tbsp Soy
sauce (low sodium)

Garlic cloves, minced

Nonfat sour cream
- 1

Whole-wheat tortillas

Cut ostrich steaks
into thin strips. In a large bowl, toss together meat, green pepper,
tomato, and onion and chili. In
a small bowl, mix lime juice, broth, olive oil, soy sauces, and garlic.
Pour over chicken and vegetable mixture to marinate. Add 2-3 tablespoons
of marinade mixture to nonstick pan (nonfat). Cook meat over medium heat
for 5-7 minutes; add 2 tablespoons more of marinade mixture and all
vegetables; cook for 5 more minutes or until done. Wrap in warm tortilla
with nonfat sour cream and salsa.
