MISO SOUP
3 cups
water
1 small onion sliced
3 heaping tablespoons miso
1 cup cooked noodles (try Japanese ramen noodles)
Bring
water to a simmer and add onion. Cook until onion is tender. Remove a
small amount of the water and mix it with the miso to form a smooth
paste. Add the miso paste to the water and onions. Simmer for 10
minutes. Add the cooked noodles and simmer gently just to heat them
through. Add any grain or vegetables you would like to the broth. Serve
immediately. Makes 4 servings.
