CREAMY LEMON PUDDING

Ingredients

Soymilk

1-1/4 qts.

Cornstarch

4 oz. (3/4 cup)

Eggs

6 (or liquid egg substitute)

Grated lemon peel

1 Tbsp. + 1 tsp.

Sugar

4 oz. (1/2 cup)

Lemon juice

1/4 cup

Salt

1/2 tsp.

Sliced strawberries/canned peaches

As needed

Method

 

Blend soymilk, cornstarch, eggs and lemon peel in blender.

 

Add sugar and blend well.

 

Pour mixture into sauce pan; cook and stir until mixture begins to thicken.

 

Reduce heat; cook and stir 2 to 3 minutes longer or until thickened.

 

Stir in lemon juice and salt.

 

Spoon 6 oz. portions into individual serving dishes.

 

Refrigerate until chilled.

 

Serving Suggestion: Serve with strawberries or canned peaches.
