CHEWY DRY-FRUIT FUDGE (24 pieces)

1 cup treated Nutrela flakes

½ cup finely chopped dates

50 gm sugar

4 tbsp. Mava

3-5 drops almond essence

½ cup raw Nutrela flakes

2 cups milk

4 tbsp. ghee

¼ cardamom powder

½ cup chopped nuts (pista and walnuts mixed)

1.      Mix together treated flakes, dates, milk and 2 tbsp. Ghee. Cook on raw flame in a kadai or frying –pan (preferably non-stick) till soft and almost dry.

2.      Remove from fire and mash till course granular texture is obtained (preferably in an electric mixer).

3.      Add sugar and cook till mixture starts to leave the sides of frying pan or kadai.

4.      Add crumbled mava, 2 tbsp. Ghee, cardamom powder, essence and chopped nuts (reserving the few for the top), and cook on a low flame.

5.      Grease a thali to spread the mixture. To test it, drop a quarter teaspoonful of the mixture on the thali; cool slightly. The mixture is ready, if you can form a ball between    b lightly greased fingers. When a soft chewy consistency is obtained, spread the mixture (2 cm thick) on the thali. Sprinkle remaining nuts on the top and press on to the mixture.

6.      Allow it to cool and cut into squares.
